German Potato Salad
Ingredients
4 large potatoes (red are ideal)
6 strips of thick bacon
1 large onion
½ c mayo
½ c apple cider vinegar
1 T yellow mustard
2 packets artificial sweetener
2-4 T dill
Directions

Peel and curt potatoes into bite-sized chunks.

Place potatoes in water (keeps from browning and removes some of the starch).

Cut bacon into ¼” pieces.

Cut onion sized to match bacon.

Place potatoes in boiling water and boil for 10 minutes.

Meanwhile, fry bacon until it starts to color.

Add onion and fry bacon and onion until desired doneness (brown).

Remove from heat.

Remove bacon and onion and set aside (reserve bacon grease).

Mix mayo, vinegar, mustard and sweetener and set aside.

Drain potatoes and add to bacon grease.
-
Return pan with potatoes to heat.

Return bacon and onion to pan.

Add liquid.
-
Heat until warm.

Serve immediately.
